Menu Monday

It's time to revive Menu Monday!

As always, the menu is gluten-free, dairy-free no matter what it sounds like and starts off with a big green salad. Added to the "-frees" my menu is now egg-free, soy-free, peanut-free, and when the family has chicken, I have turkey, pork, or extra veggies instead. Shellfish are cooked separately from other foods for my shell-fish-free child who will eat other non-shell mollusks instead such as octopus or squid.

MONDAY: Veggie Soup with Cornbread
TUESDAY: Smoky Quinoa Chili
WEDNESDAY: Bean, Broccoli, & Cauliflower Tacos
THURSDAY: Seafood Salad (literally, just the seafood on top of a green salad)
FRIDAY: Veggie Plate (Mashed Potatoes, Green Beans, Garlic Carrots, Balsamic Mushrooms)
SATURDAY:
SUNDAY: Grilled fish, Corn-on-the-Cob, Steamed Broccoli, Cauliflower, & Carrots

Menu Monday

All meals begin with a Salad-Bar Salad (that has to fill your dinner plate).  All meals are Gluten- & Dairy- Free.

Monday: Asparagus, Peas, & Lemon Fettucine with Baked Marinated Chickpeas
Tuesday: Fish Chowder & Seared Cauliflower w/ Garlic & Tamari
Wednesday: Moroccan Bean & Lentil Stew (Bean7 begged for me to make it again!!)
Thursday: Jamaican Fish (not spicy), Steamed Broccoli, Peas, Ginger Glazed Carrots

I will be out of town this weekend so my family likes to fend for themselves while I'm away so that MrBeans can make them all sorts of things they aren't supposed to have!  We will be mostly eating out on our dive trip.  I'll be packing lots of healthy snacks to take with me and a frozen fish & veggie foil packet to grill over the campfire that first night that we're campfire eating.  So that's it for this week!

All dinners begin with a Salad-Bar Salad.  All are Gluten- & Dairy- Free.

Monday: Squash-ghetti & Marinara Sauce
Tuesday: Lemon-Dill Tilapia, Balsamic Zucchini & Squash
Wednesday: Moroccan Bean Stew with Sweet Potatoes
Thursday: Artichoke & Sun-dried Tomato Whiting, Brussel Sprouts, Seared Cauliflower & Carrots
Friday: Oven-Baked Chickpea Ratatouille
Saturday: Orange-Honey Salmon, Green Beans, Garlic Parsnips
Sunday: Halibut with White Sauce & Broccoli

Wednesday begins the Nativity Fast :)  I look forward to the change in menus!

All meals begin with a Salad Bar Salad and are Gluten- & Dairy- Free.

Monday: Cubed Steak, Mashed Potatoes, Green Beans
Tuesday: Pork Roast, Potatoes, Corn, Onions, Peas
Wednesday: eat out after the funeral
Thursday: Fish sticks, Broccoli, Carrots
Friday: Spaghetti w/ Marinara Sauce
Saturday: Grilled Trout, Grilled Zucchini, Glazed Maple & Mustard Carrots
Sunday: Blackened Catfish, Steamed Veggies, Green Beans

Menu Monday

What's on your plate for the week?

All meals start with a salad (these are full-blown salads with a myriad of toppings - grapes, olives, oranges, peppers, tomatoes, seeds, sea weed, etc, not wimpy iceburg lettuce smothered in ranch dressing ;) ).
All meals are gluten-free and dairy-free - no matter what the title makes it appear to be!

Monday - Philly Cheese Steaks
Tuesday - Hawaiian Slow-Cooker Ribs & Broiled, Skewered Veggies
Wednesday - Veggie Soup & Cornbread
Thursday - Ropa Vieja
Friday - Stir-Fry Veggies & Rice
Saturday - Meat Loaf, Corn on the Cob, Green Beans
Sunday - Prayerfully Thanksgiving Dinner with the in-laws ... If not, Albondigas Soup

We are possibly going to serve the homeless on Thanksgiving rather than go to a traditional Thanksgiving meal - hence the non-traditional meal :)  My side of the family always gathers the Sunday prior.  My father-in-law is in the hospital but mother-in-law has some hope of having everyone over the Sunday after Thanksgiving, if not, then we'll see them for Christmas.
